  • 4 medium Russet potatoes (about 2 lbs)
  • 2 tbsp Cajun seasoning
  • 1 cup shredded sharp Cheddar cheese
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream
  • 1/3 cup ranch dressing (for dipping)

Instructions

  1. Wash and peel the Russet potatoes. Cut them into thin strips, about 1/2 inch thick.
  2. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
  3. Drain and dry the potatoes thoroughly. Heat oil in a deep fryer or large pot to 350°F (175°C) and fry the potatoes in batches until golden brown (about 4-5 minutes per batch).
  4. Toss the hot fries immediately in a bowl with Cajun seasoning.
  5. Place fries on a serving platter, sprinkle with shredded Cheddar cheese while hot, and top with green onions.
