  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter (cold)
  • ½ cup granulated sugar
  • 3 large eggs
  • ⅔ cup fresh lemon juice (about 4 lemons)
  • Zest of 2 lemons
  • ¼ cup heavy cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix flour and sugar. Cut in cold butter until crumbly. Add ice water gradually until the dough forms.
  2. Roll out the dough into a circle about 12 inches wide. Place it in an 8 or 9-inch tart pan, pressing gently into place.
  3. Prick the base with a fork, line with parchment paper, and fill with pie weights. Bake for 15 minutes until golden, remove weights, and bake for another 5 minutes.
  4. For the lemon curd, whisk sugar and eggs in a saucepan over low heat. Add lemon juice and zest, cooking until thickened (about 10 minutes).
  5. Once thickened, stir in heavy cream if using. Pour into the cooled tart shell and refrigerate for at least two hours.
  6. Slice and serve chilled! Top with whipped cream or fresh fruit if desired.
