  • 1 cup Greek yogurt
  • 3 cloves garlic, minced
  • 1 medium cucumber, grated
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, sliced
  • Warm pita bread (for serving)

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, salt, pepper, and herbs. Add lamb cut into pieces and marinate for at least an hour.
  2. Preheat your grill or skillet to medium-high heat. Cook marinated lamb for 4-5 minutes per side until charred. Let it rest before slicing.
  3. Combine Greek yogurt, grated cucumber (squeeze excess water), minced garlic, lemon juice, salt, and dill in a bowl.
  4. Serve rice as the base in bowls. Top with sliced lamb, colorful veggies like tomatoes and onions.
  5. Generously drizzle tzatziki over the bowls and garnish with parsley or mint. Serve with warm pita bread.
