  • 1 lb flank steak
  • 1 cup bell peppers (mixed colors)
  • 1 medium onion
  • 1 cup provolone or cheddar cheese (shredded)
  • 4 large keto tortillas or wraps
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Slice the flank steak against the grain into thin strips. Chop bell peppers and onion into bite-sized pieces.
  2. In a skillet over medium-high heat, warm 1 tbsp olive oil. Sauté the flank steak with salt and pepper until browned (5-7 minutes). Remove from pan.
  3. Add another tbsp of olive oil to the skillet. Sauté bell peppers and onion until softened (5-6 minutes). Stir in garlic powder.
  4. Return steak to skillet with veggies; mix well.
  5. Place filling in keto tortillas, top with cheese, and roll tightly.
  6. Bake on a parchment-lined baking sheet at 375°F for 10-15 minutes until golden brown.
