  • 1 cup all-purpose flour (sifted)
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Chop half of the pistachios coarsely and reserve some whole for decoration.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually mix in flour and baking powder until just combined.
  6. Fold in chopped pistachios and scoop tablespoon-sized balls onto the baking sheet. Top each cookie with a whole pistachio.
