  • 1 cup Italian breadcrumbs
  • 1 large egg
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (for garnish)

Instructions

  1. In a large bowl, combine ground beef, Italian breadcrumbs, egg, parsley, garlic, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium-high heat. Brown meatballs in batches for about 5 minutes; set aside.
  3. In the same pot, sauté chopped onions and garlic until softened (about 3 minutes).
  4. Add diced tomatoes and broth; stir well.
