  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 cup Irish stout beer (like Guinness)
  • 2 large carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • For Dumplings: 1 cup all-purpose flour
  • 2 tsp baking powder
  • 4 tbsp unsalted butter, softened
  • ½ cup milk
  • 2 tbsp fresh herbs (parsley or chives), chopped

Instructions

  1. Chop the beef chuck into bite-sized pieces.
  2. In a large Dutch oven over medium heat, add oil and brown the beef in batches until golden.
  3. Remove the beef and sauté onions and garlic until fragrant. Add carrots and potatoes; stir occasionally.
  4. Pour in the Irish stout and beef broth, scraping any browned bits from the bottom. Return the beef to the pot.
  5. Season with thyme, bay leaves, salt, and pepper. Simmer covered on low heat for about 2 hours.
  6. For dumplings: Mix flour, baking powder, butter, milk, and herbs in a bowl until just combined.
  7. Drop spoonfuls of dumpling batter onto the stew during the last 15-20 minutes of cooking and cover to steam.
