  • 1 whole chicken (45 pounds)
  • ½ cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 ripe pears (Bosc or Anjou), quartered
  • Salt and pepper to taste
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a roasting pan with nonstick spray.
  2. In a bowl, mix softened butter, garlic, rosemary, thyme, and parsley until well combined.
  3. Pat the chicken dry and season generously with salt and pepper inside and out. Loosen the skin over the breast area.
  4. Spread half of the herb butter mixture under the skin; reserve some for later. Stuff the cavity with pear quarters and any remaining herbs.
  5. Place the chicken in the pan, brush with remaining herb butter, and arrange extra pear slices around it.
  6. Roast for about 1 hour and 20 minutes or until juices run clear at the thigh (internal temperature should reach at least 165°F/75°C).
  7. Let rest for 10-15 minutes before carving. Drizzle with balsamic vinegar before serving.
