  • 1 cup water
  • 1/4 cup unsalted butter
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp ground cinnamon (for dough)
  • 1 cup vegetable oil (for frying)
  • 1/2 cup granulated sugar mixed with 1 tsp ground cinnamon (for topping)

Instructions

  1. In a saucepan, combine water, butter, and sugar over medium heat until melted. Bring to a simmer.
  2. Add flour all at once and stir vigorously until the mixture forms a ball that pulls away from the sides. Remove from heat.
  3. Let cool slightly, then mix in eggs one at a time until smooth and thick.
  4. Heat vegetable oil in a deep pot to 350°F (175°C).
  5. Pipe heart shapes onto parchment-lined sheets using a star tip.
  6. Fry churros in hot oil for 2-3 minutes per side until golden brown. Drain on paper towels.
  7. Toss warm churros in cinnamon sugar mixture before serving.
