  • ½ cup apricot jam (high-quality)

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whip egg whites until soft peaks form. Gradually add granulated sugar and whisk until stiff peaks form.
  3. In another bowl, combine ground hazelnuts and powdered sugar; sift this mixture into the egg whites and gently fold until fully combined.
  4. Transfer the batter to a piping bag and pipe small circles onto the prepared sheets. Let them sit for about 30 minutes to form a skin.
  5. Bake macarons for 15-20 minutes until firm yet chewy. Allow them to cool completely before removing from sheets.
  6. Spread apricot jam on one macaron shell and sandwich it with another.
