Ingredients

Scale
  • 1 lb lean ground turkey
  • 2 medium sweet potatoes (about 2 cups diced)
  • 1 cup bell peppers (mixed colors, diced)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by peeling and dicing the sweet potatoes, chopping the bell peppers, onion, and mincing the garlic.
  2. In a large skillet over medium heat, add olive oil. Sauté onion until translucent (about 3 minutes), then add garlic for another minute.
  3. Add ground turkey to the skillet. Cook until browned (5–7 minutes), breaking it apart as you go.
  4. Stir in diced sweet potatoes, cumin, chili powder, salt, and pepper. Cover and simmer for about 10 minutes until sweet potatoes are tender.
  5. Add bell peppers, stirring gently. Cook uncovered for an additional 5 minutes until peppers are crisp-tender.
  6. Serve warm straight from the skillet or transfer to plates.
