  • 8 oz pasta of choice (spaghetti, penne, or zoodles)
  • 1 cup fresh basil leaves
  • 1/2 cup fresh parsley leaves
  • 2 cloves garlic
  • 1 ripe avocado
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 cup Greek yogurt
  • Salt to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a food processor, blend basil, parsley, garlic, avocado, lemon juice, and olive oil until smooth. Season with salt.
  3. In a large bowl, combine the green mixture with Greek yogurt until fully incorporated. Add reserved pasta water if needed for consistency.
