  • 9 no-boil lasagna noodles
  • 2 cups full-fat Greek yogurt
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 2 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a bowl, mix Greek yogurt with garlic powder, oregano, salt, pepper, and fold in spinach.
  3. Spread a thin layer of marinara sauce at the bottom of the dish, followed by noodles and half the yogurt mixture. Sprinkle mozzarella on top. Repeat layers until all ingredients are used.
  4. Finish with noodles topped with marinara sauce, mozzarella, and Parmesan cheese.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until golden.
