  • 1 cup cucumbers, sliced

  • 1 cup bell peppers (any color), diced

  • 1/3 cup Kalamata olives, pitted
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
