  • 1 lb boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 small red onion, finely chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup Greek yogurt
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a large bowl, finely chop the chicken until it resembles ground chicken.
  3. Mix in garlic, red onion, feta cheese, parsley, salt, and pepper until well combined.
  4. Form the mixture into meatballs about 2 inches in diameter and place them on the baking dish.
