  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 medium Yukon Gold potatoes, peeled and cubed
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cups low-sodium vegetable broth
  • 2 tsp curry powder
  • Salt to taste

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until fragrant and golden.
  2. Add diced carrots and celery; cook for about five minutes until slightly softened.
  3. Stir in cubed Yukon Gold potatoes and sauté for another couple of minutes.
  4. Pour in vegetable broth and coconut milk. Add curry powder and bring to a boil. Reduce heat to simmer for about 20 minutes until all veggies are tender.
  5. Blend the soup until smooth using an immersion blender or regular blender in batches. Season with salt as needed before serving.
