  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 cup warm water (110°F/43°C)
  • 3 tbsp extra virgin olive oil (plus more for greasing)
  • 1 tsp sea salt
  • 2 tbsp fresh rosemary or thyme

Instructions

  1. In a bowl, combine warm water and yeast; let sit for 5 minutes until frothy.
  2. In another bowl, whisk together gluten-free flour and salt.
  3. Mix the yeast mixture with the dry ingredients and half of the olive oil until a sticky dough forms.
  4. Cover the dough and let it rise in a warm spot for about 1 hour or until doubled in size.
  5. Preheat your oven to 425°F (220°C) and grease a baking dish with olive oil.
  6. Transfer the risen dough into the baking dish, spreading it evenly. Dimple the surface with fingertips.
  7. Top with remaining olive oil and fresh herbs before baking for 20-25 minutes until golden brown.
