  • 2 cups Strong Coffee (cooled)
  • 1 cup Mascarpone Cheese
  • 1 cup Heavy Cream
  • ½ cup Granulated Sugar
  • 1 tsp Ground Cinnamon
  • Cocoa Powder (for garnish)
  • Fresh Ginger (optional, for garnish)

Instructions

  1. Brew 2 cups of strong coffee and let it cool to room temperature.
  2. In a large mixing bowl, combine mascarpone cheese, heavy cream, sugar, and cinnamon. Whip with an electric mixer until soft peaks form (about 5 minutes).
  3. Briefly dip each gingerbread cookie in the cooled coffee, ensuring they don’t soak too long.
  4. In a rectangular dish, layer soaked cookies followed by half of the mascarpone mixture. Repeat with another layer of cookies and top with the remaining mascarpone.
  5. Cover tightly and refrigerate for at least 4 hours or overnight to set.
  6. Before serving, dust the top with cocoa powder and add fresh ginger if desired.
