  • 2 lbs sweet potatoes, peeled and sliced thinly
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup cheddar cheese, grated
  • 3 tablespoons butter, melted
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Slice the sweet potatoes into thin rounds (about 1/8 inch).
  3. In a bowl, whisk together heavy cream, minced garlic, salt, and pepper.
  4. Layer half of the sweet potato slices in the baking dish, pour half of the cream mixture over them, and sprinkle with half of the cheese. Repeat layers with remaining ingredients.
  5. Mix panko breadcrumbs with melted butter and sprinkle over the top layer.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
