  • 2 medium eggplants (sliced into ½ inch rounds)
  • ¼ cup olive oil
  • 3 cloves fresh garlic (minced)
  • 1 tsp dried oregano
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
