  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 tbsp butter
  • 2 lbs Yukon Gold potatoes, peeled and chopped
  • 1 lb fresh baby carrots
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix garlic, herbs, salt, pepper, and olive oil. Rub this mixture all over the chicken.
  3. Place the chicken in a baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  4. Meanwhile, boil potatoes in salted water until tender, about 15 minutes.
  5. In another pot, boil carrots for 5-7 minutes until tender. Drain and glaze with honey and a pinch of salt.
  6. Drain potatoes and mash with butter, salt, pepper, and milk until creamy.
