  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 4 medium carrots, sliced into bite-sized pieces
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray or olive oil.
  2. Season chicken breasts with salt and pepper. Rub minced garlic over each breast.
  3. Toss sliced carrots in olive oil, thyme, and rosemary.
