Instructions

  1. Gather all ingredients and ensure the cooked jasmine rice is cold.
  2. Heat a splash of oil in a skillet over medium heat and scramble the eggs until just set. Remove from the pan and set aside.
  3. In the same skillet, add more oil if needed and sauté minced garlic until fragrant (about 30 seconds). Add mixed vegetables and stir-fry for about three minutes until tender.
