  • 2 lbs russet potatoes, peeled and chopped
  • 2 large yellow onions, sliced
  • 4 tbsp unsalted butter (divided)
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyere cheese
  • Salt and pepper, to taste

Instructions

  1. Boil chopped potatoes in salted water until fork-tender (15-20 minutes). Drain and return to the pot.
  2. In a skillet, melt 2 tbsp butter over medium heat. Add sliced onions and cook until caramelized (about 15 minutes).
  3. Smash the boiled potatoes with remaining butter, heavy cream, half of the caramelized onions, salt, and pepper until desired consistency is achieved.
  4. Gently fold in Gruyere cheese and remaining onions.
  5. Transfer the mixture to a greased baking dish and bake at 400°F for 20-25 minutes until golden brown.
