  • 4 medium yellow onions, sliced
  • 3 tbsp unsalted butter
  • 2 cups low-sodium chicken broth
  • 1 cup shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried thyme
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large skillet, melt the butter over medium heat. Add the sliced onions and sauté until caramelized (about 15-20 minutes).
  3. In a bowl, combine uncooked rice with chicken broth and dried thyme. Stir in the caramelized onions and half of the shredded cheeses.
  4. Pour the mixture into the prepared baking dish. Top with remaining cheese and panko breadcrumbs mixed with melted butter.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  6. Allow to cool slightly before serving.
