  • 4 medium sweet yellow onions, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Season short ribs with salt and pepper, then sear on all sides until browned (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, add sliced onions and a pinch of salt. Cook low and slow until golden brown (20-30 minutes), stirring occasionally.
  4. Add minced garlic and cook for about one minute until fragrant. Deglaze the pot with red wine, scraping any bits from the bottom.
  5. Return the short ribs to the pot along with beef broth, thyme, and bay leaves. Bring to a gentle simmer.
  6. Cover and transfer to the oven, cooking for about three hours or until the meat is fork-tender.
