  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a blender or food processor, combine black beans, eggs, maple syrup, cocoa powder, vanilla extract, and baking powder. Blend until smooth.
  3. Pour the mixture into a bowl and gently fold in the dark chocolate chips.
  4. Spoon the batter into the prepared muffin cups until three-quarters full.
  5. Bake for 18-22 minutes or until a toothpick comes out clean.
  6. Allow to cool in the tin for five minutes before transferring to a wire rack.
