  • 3 boneless, skinless chicken breasts (1.5 lbs)
  • 2 cloves fresh garlic
  • 1 cup green salsa (salsa verde)
  • 8 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, diced
  • ½ cup fresh cilantro
  • 2 tbsp olive oil (for sautéing)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a saucepan, cover chicken breasts with water, season with salt and pepper, and boil until cooked through (15-20 minutes). Shred the chicken.
  3. In a blender, combine green salsa, garlic, onion, and cilantro; blend until smooth.
  4. Soften tortillas by dipping them briefly in the sauce. Fill each tortilla with shredded chicken and cheese; roll tightly and place seam-side down in the baking dish.
  5. Pour remaining sauce over the rolled tortillas and sprinkle additional cheese on top.
  6. Bake for 25-30 minutes until bubbly and golden brown.
