  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 cups mixed vegetables (broccoli, bell peppers, zucchini)
  • 1 cup heavy cream
  • 1/4 cup low-sodium soy sauce
  • 1 cup sharp cheddar cheese, shredded
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant (about 1 minute).
  4. In a large bowl, mix sautéed garlic with mixed vegetables, heavy cream, soy sauce, and half of the cheese.
  5. Spread seasoned chicken in the baking dish, top with vegetable mixture, and sprinkle remaining cheese on top.
  6. Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
