  • 1 pound ground beef or sausage
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 tsp paprika
  • ½ tsp cayenne pepper (adjust to taste)
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions, bell pepper, and celery until tender.
  2. Add ground beef or sausage to the skillet. Cook until browned, breaking it apart with a spatula.
  3. Stir in garlic, paprika, and cayenne pepper; cook for about one minute.
  4. Add rinsed rice and chicken broth to the mixture. Stir well to combine.
  5. Bring to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes until rice absorbs the liquid.
  6. Remove from heat and let sit covered for five minutes before fluffing with a fork.
