  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tsp curry powder
  • 1 cup frozen peas and carrots
  • 1 cup full-fat coconut milk
  • 1 cup low-sodium chicken broth
  • 1 ready-made pie crust

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken with salt, pepper, and curry powder; sauté over medium heat until golden brown (about 6 minutes per side). Remove from skillet.
  3. In the same pan, add onion and garlic; sauté until fragrant (about 3 minutes).
  4. Stir in curry powder; cook for one minute. Add coconut milk and chicken broth; simmer for ten minutes until slightly thickened.
  5. Return chicken to the pan along with peas and carrots; mix well.
  6. Pour mixture into the baking dish, cover with pie crust, crimp edges, cut slits in the top for steam escape.
  7. Bake for about 35 minutes or until golden brown.
