Ingredients

  • 2 cups sushi rice
  • 2.5 cups water
  • 3 tbsp rice vinegar
  • 1/2 cucumber, cut into thin strips
  • 1 ripe avocado, sliced
  • 1 cup imitation crab meat (or real crab)
  • 1/2 cup tempura flakes
  • 4 nori sheets
  • Soy sauce (for serving)

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a pot, bring to a boil, cover, reduce heat, and simmer for 20 minutes until water is absorbed.
  2. Let the rice sit off heat for 10 minutes, then mix in rice vinegar and salt.
  3. While cooling, slice cucumber and avocado.
  4. Place a nori sheet on a bamboo mat. Wet hands to prevent sticking and spread about 1 cup of rice on nori, leaving an inch at the top.
  5. Add cucumber, avocado, and imitation crab on the rice; sprinkle tempura flakes on top.
  6. Roll tightly using the mat, then slice into bite-sized pieces. Serve with soy sauce.
