  • 1 lb ground beef or Italian sausage
  • 4 cloves fresh garlic, minced
  • 28 oz canned diced tomatoes
  • 1 medium yellow onion, chopped
  • 8 oz lasagna noodles, broken into pieces
  • 4 cups low-sodium beef broth
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp dried Italian herbs (oregano and basil)

Instructions

  1. Brown the ground beef or sausage in a skillet over medium heat. Drain excess fat and set aside.
  2. Sauté chopped onion and minced garlic in the same skillet until fragrant.
  3. In a crockpot, combine the browned meat, sautéed vegetables, diced tomatoes (with juices), beef broth, dried herbs, and broken lasagna noodles.
  4. Cover and cook on low for 6 hours or high for 3 hours until noodles are tender.
  5. Stir in ricotta cheese about 15 minutes before serving and top with mozzarella cheese.
