  • 2 lbs beef chuck roast, cut into bite-sized chunks
  • 4 medium carrots, sliced
  • 3 medium Yukon Gold potatoes, cubed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp dried thyme
  • 2 bay leaves
  • For the Dumplings:
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup whole milk
  • 1/2 tsp salt
  • 4 tbsp melted butter

Instructions

  1. Season beef with salt and pepper. In a skillet over medium heat, sauté onions and garlic until fragrant.
  2. Add seasoned beef, sautéed onions, garlic, carrots, potatoes, thyme, bay leaves, and broth to your crockpot. Stir gently.
  3. Cover and cook on low for about 8 hours or high for about 4 hours.
  4. About half an hour before serving, mix flour, baking powder, milk, salt, and melted butter in a bowl. Drop spoonfuls onto the stew.
  5. Cover again and steam dumplings for an additional 30 minutes before serving.
