  • 4 cups water
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons extra virgin olive oil

Instructions

  1. In a pot, bring 4 cups of water to a boil. Gradually whisk in 1 cup of polenta while stirring continuously until thickened (about 5-7 minutes).
  2. Remove from heat and stir in 1 cup Parmesan cheese, butter, salt, and pepper until well mixed.
  3. Pour the mixture into a greased baking dish and let cool at room temperature for about one hour or refrigerate until firm.
  4. Cut out rounds using a cookie cutter or knife from the set polenta slab.
  5. Heat olive oil in a skillet over medium-high heat. Fry the polenta rounds until golden brown on both sides (about 3 minutes per side).
  6. Transfer to paper towels to absorb excess oil and serve warm garnished with fresh herbs.
