  • 2 lbs Yukon Gold potatoes, diced
  • 1/4 cup gochujang
  • 1/3 cup mayonnaise
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 2 green onions, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp toasted sesame seeds

Instructions

  1. Preheat oven to 425°F (220°C). Wash and dice Yukon Gold potatoes into bite-sized pieces.
  2. Toss potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown and crispy.
  3. While the potatoes roast, mix gochujang, mayonnaise, rice vinegar, honey, and sesame oil in a bowl until smooth.
  4. Once roasted potatoes cool slightly, transfer them to a large bowl and pour the sauce over them; toss to coat.
  5. Add chopped green onions and sprinkle with toasted sesame seeds before serving.
