  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Place chicken breasts between plastic wrap and pound to about half an inch thick.
  3. Set up three bowls: one with flour mixed with salt and pepper, one with whisked eggs (add Italian seasoning), and the last with panko breadcrumbs mixed with Parmesan.
  4. Coat each chicken breast in flour, dip in the egg wash, then roll in the panko mixture.
  5. Heat olive oil in a skillet over medium heat; cook each piece until golden brown on both sides (3-4 minutes per side) before transferring to the baking dish.
  6. Spoon marinara sauce over the chicken and top with mozzarella cheese. Bake for 20 minutes or until bubbly and golden.
