  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup basmati rice
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Rinse basmati rice under cold water until the water runs clear.
  2. In a saucepan, combine rinsed rice and chicken broth; bring to a boil, then reduce heat, cover, and simmer for 15 minutes until liquid is absorbed.
  3. While the rice cooks, heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper; sauté for about 6 minutes on each side until golden brown.
  4. Set chicken aside; in the same skillet, add minced garlic and cook until fragrant (about 1 minute). Pour in heavy cream and soy sauce while scraping up browned bits from the bottom.
  5. Return chicken to the skillet along with thyme and parsley; simmer gently for another 5 minutes.
  6. Fluff the basmati rice with a fork and serve topped with creamy herb chicken.
