  • 1/2 cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 1 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 8 oz cream cheese (full-fat, softened)
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, sugar, and salt until combined.
  3. In a large bowl, beat softened butter and eggs until light and fluffy.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in cranberries and white chocolate chips.
  5. Pour batter into the prepared pan and smooth it out evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before frosting with whipped cream cheese mixed with powdered sugar.
