  • 1 cup breadcrumbs
  • 1 large egg
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium carrots, sliced
  • 2 medium Yukon Gold potatoes, diced
  • 2 tbsp fresh dill, chopped

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper until well mixed. Form into small meatballs (about 1 inch).
  2. Heat oil in a large pot over medium heat. Brown the meatballs in batches for about 5 minutes; set aside.
  3. In the same pot, sauté onions until translucent (about 3 minutes). Add carrots and potatoes; cook for another minute.
  4. Pour in beef broth and add dill. Bring to a gentle boil; then reduce to simmer.
  5. Return meatballs to the pot and simmer for 20 minutes or until potatoes are tender.
  6. Serve hot with fresh dill or sour cream on top.
