  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 1 cup full-fat cottage cheese
  • 2 cups fresh spinach
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ cup sour cream (or Greek yogurt)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the diced sweet potatoes in olive oil, salt, and pepper. Spread them on the baking sheet and roast for 25-30 minutes until tender.
