  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup low-fat cottage cheese
  • 1/2 cup diced red bell pepper
  • 1/2 cup finely chopped celery
  • 2 cloves fresh garlic, minced

  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Season chicken breasts with salt and pepper, place them in a baking dish, and bake for 25-30 minutes until cooked through. Let cool before shredding.

  3. In a large bowl, combine shredded chicken, cottage cheese, chopped vegetables, and minced garlic. Stir gently to mix.
  4. In a separate bowl, whisk together sour cream and Dijon mustard until smooth. Fold this dressing into the salad mixture until well combined.
