  • 4 cups crumbled cornbread (homemade or store-bought)
  • 1 cup finely chopped celery
  • 1 cup diced onion
  • 2 cups low-sodium vegetable broth
  • 2 tsp dried sage
  • 2 tsp dried thyme
  • 1/4 cup melted butter
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat and sauté celery and onion until soft.
  3. In a large bowl, combine crumbled cornbread with sautéed vegetables.
  4. Gradually add vegetable broth until mixture is moist but not soggy. Mix in sage, thyme, salt, and pepper.
  5. Transfer to a greased baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
  6. Let rest for five minutes before serving.
