  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp ground cinnamon
  • ½ cup brown sugar
  • ¼ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan to form the crust.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, then mix in eggs one at a time until creamy.
  3. Stir in ground cinnamon. Pour half of the filling over the crust; sprinkle half of the brown sugar and cinnamon mixture on top. Add remaining filling and repeat with more brown sugar.
  4. Bake for 60-70 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar for an hour, then refrigerate until fully chilled.
  5. Serve slices drizzled with heavy cream for added richness.
