  • 2 cups starchy potatoes (about 2 medium Russet potatoes)
  • 1/2 cup fresh green onions, thinly sliced
  • 4 tbsp unsalted butter
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and chop the potatoes into even pieces.
  2. Boil the chopped potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash them with butter and milk until creamy.
  3. Stir in the green onions, salt, and pepper to taste, ensuring everything is well combined.
  4. Roll out the thawed puff pastry on a floured surface; cut into squares or circles. Spoon the potato mixture onto one half of each pastry piece, fold over, and seal the edges tightly.
  5. Place the puffs on a parchment-lined baking sheet. Brush each puff with beaten egg for a golden finish. Bake for 20-25 minutes until golden brown.
