  • 1/2 cup strong brewed coffee (cooled)

  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat eggs and sugar until light and fluffy. Gently fold in sifted flour, cocoa powder, baking powder, and brewed coffee until just combined.
  3. Spread batter evenly on the baking sheet and bake for 12-15 minutes until it springs back when touched.
  4. Cool slightly then dust a clean kitchen towel with powdered sugar. Flip the sponge onto the towel and remove parchment paper. Roll tightly from one end.
  5. Whip heavy cream with vanilla extract until soft peaks form.
  6. Unroll the cooled sponge, spread whipped cream evenly, and re-roll gently into a log shape.
