  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 12 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Gather all ingredients and mince the garlic.
  2. In a large skillet, melt butter over medium heat. Season chicken breasts with salt and pepper, then sear until golden brown (5-7 minutes per side). Remove from skillet when cooked through.
  3. In a pot of salted boiling water, cook fettuccine according to package instructions until al dente (8-10 minutes). Reserve ½ cup of pasta water before draining.
  4. In the same skillet used for the chicken, sauté minced garlic until fragrant (about 1 minute). Add heavy cream and simmer gently. Gradually whisk in Parmesan cheese until melted and smooth; season with salt and pepper.
  5. Slice cooked chicken into strips. Combine drained fettuccine with the sauce and add reserved pasta water as needed for desired creaminess. Toss well before adding sliced chicken on top.
  6. Serve garnished with freshly chopped parsley if desired.
