  • ¼ cup lamb drippings
  • ¼ cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pat the leg of lamb dry and rub it with a mixture of minced garlic, rosemary, thyme, olive oil, salt, and pepper.
  3. Sear the lamb in a hot skillet over medium-high heat for about 4-5 minutes on each side until browned.
  4. Transfer the lamb to a roasting pan and roast for approximately 1 hour and 30 minutes or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
