  • 1 tbsp orange zest
  • 6 large eggs (yolks and whites separated)
  • ½ cup vegetable oil
  • ½ cup fresh orange juice

Instructions

  1. Preheat your oven to 325°F (160°C) and lightly grease a tube pan.
  2. In a bowl, whisk together flour, sugar (reserve some), baking powder, salt, and orange zest.
  3. In another bowl, beat egg yolks with vegetable oil, fresh orange juice, and remaining sugar until smooth.
  4. Gently combine wet ingredients with dry ingredients until just mixed.
  5. In a clean bowl, beat egg whites until soft peaks form; carefully fold into the batter.
  6. Pour batter into the prepared pan and bake for about 55-60 minutes or until golden brown and a toothpick comes out clean.
  7. Cool upside down before removing from the pan. Serve with whipped cream or fresh fruit.
