  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar

  • 3 large egg yolks
  • 3 large egg whites

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, cream together softened butter and sugar until light. Gradually add flour until dough forms. Press into mini tart pans.
  2. Bake tart shells for 15 minutes or until lightly golden. Allow to cool completely.
  3. In a saucepan over medium heat, whisk together lemon juice, sugar, egg yolks, and vanilla until thickened (about 5 minutes). Pour into cooled tart shells.
  4. In a clean bowl, beat egg whites until soft peaks form. Gradually add sugar and continue beating until stiff peaks are achieved.
  5. Spread or pipe meringue over each filled tart shell, covering the lemon filling completely.
  6. Broil tarts for about 3 minutes or until meringue is lightly browned.
